Spinach Casserole

Ingredients

2 c cottage cheese
3 eggs, beaten
3 T flour
3 T butter, room temperature and cut into cubes
¼ c cheese sharp or tasty cheese, grated
Several good handfuls fresh spinach, trimmed and roughly chopped

Directions

Steam spinach and drain very well. Squeeze out any remaining water and continue to drain while combining the rest of the ingredients. Mix in spinach. Prepare a casserole dish with cooking spray. Pour mixture into dish and bake for about an hour or until top is golden brown and casserole is bubbling.
