Skillet Potatoes w/ Greens

Ingredients

·1 and 1/2 pounds red potatoes, halved
·Sea salt and black pepper
·8 ounces kale, stems removed and leaves torn into 2-inch pieces
·2 tablespoons extra-virgin olive oil
·1 clove garlic, thinly sliced
·Pinch red pepper flakes

Directions

Boil potatoes in a medium saucepan of salted water. Reduce heat and simmer until tender, about 10 minutes. Stir in kale and cook until wilted, about 1-2 minutes. Then, drain. Heat oil in a large pan over medium-high heat. Then, add potatoes and kale. Cook, while stirring, until potatoes are golden brown, about 5 minutes. Add garlic and red pepper flakes and cook about 1 more minute. Season with salt and pepper, then serve and enjoy!

The vegetables are so fresh and keep so much longer than those bought at the supermarket. It's all delicious but some of our favourites are the lettuce mix, spinach and the peppers and courgettes. As for the tomatoes they are so sweet.
