Red cabbage with apple

Ingredients

600g red cabbage
4 cloves
2 bay leaves
1/2 teaspoon salt
2 apples
1 tablespoon honey or brown sugar

Directions

Remove the outer leaves of the red cabbage. Cut cabbage in quarters and remove the hard core. Cut the cabbage in small strips and wash. Put the cabbage and salt in a pot. Add cloves in the bay leaves and put in the pot as well. Add some water and bring to the boil. Simmer the red cabbage approx. 20 min. Cut the apples in little cubes. Add the apple after approx. 15 min. When the cabbage is cooked remove the bay leaves and the cloves. Add some salt, pepper and honey/brown sugar to taste. Serve hot.

The vegetables are so fresh and keep so much longer than those bought at the supermarket. It's all delicious but some of our favourites are the lettuce mix, spinach and the peppers and courgettes. As for the tomatoes they are so sweet.
