Pumpkin Loaf

Ingredients

1 cup pumpkin puree
1 cup sugar (or substitute with 1 cup applesauce)
½ cup olive oil
2 eggs
1 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ginger

Directions

Remove skin of pumpkin, cut in cubes and steam until soft, mash to make puree. Preheat oven to 180 degrees and grease a loaf tin. Mix together pumpkin, sugar (or applesauce), oil and eggs. Add flour, baking powder, baking soda, cinnamon, ginger and mix well. Pour into loaf tin and bake for 60-65 minutes or until inserted knife comes out clean.
