Pineapple and Cucumber Guacamole

Ingredients

1 cucumber, peeled, seeded, and diced
1/2 cup red onion, finely diced
1-2 fresh serrano or jalapeño chilies, minced
2 T freshly squeezed lime juice, or more to taste
1 avocado, halved
1/2 pineapple, peeled, cored, and diced
salt, to taste
1/2 cup chopped cilantro, divided

Directions

In a bowl, stir together the cucumber, onion, chilies, lime juice, and salt. Score the flesh in the avocado halves in a cross-hatch pattern (not through the skin) with a knife and then scoop it with a spoon into the bowl and gently stir together. Stir in half the cilantro and the pineapple. Season to taste with additional chili and lime juice. Taste and add more salt if desired. Transfer the guacamole to a serving bowl and sprinkle the remaining cilantro on top.

The vegetables are so fresh and keep so much longer than those bought at the supermarket. It's all delicious but some of our favourites are the lettuce mix, spinach and the peppers and courgettes. As for the tomatoes they are so sweet.
