Curried Carrot Chips

Ingredients

2 large carrots, peeled
2 tsp. olive oil
1-2 tsp. sweet curry powder
salt and pepper to taste

Directions

Preheat oven to 350 degrees. Spray a large baking sheet with olive oil or cooking spray. Peel paper thin carrot strips. Toss with olive oil, curry powder, salt and pepper. Transfer to baking sheet and arrange in a single layer. Bake for 10-12 minutes or until chips are just beginning to brown. Place baking sheet on a wire rack and cool until chips are crisp, about 3 minutes. Carefully remove from baking sheet.

The vegetables are so fresh and keep so much longer than those bought at the supermarket. It's all delicious but some of our favourites are the lettuce mix, spinach and the peppers and courgettes. As for the tomatoes they are so sweet.
