Balsamic Roasted Beetroot

Ingredients

700g beetroot
2 tbsp olive oil
2 tbsp honey
2 tsp balsamic vinegar
2 tsp fresh herb of choice (thyme or rosemary are particularly good)
1/4 tsp salt

Directions

Boil the beetroot and allow to cool. Chop into pieces and put into a baking dish in a single layer. Mix the other ingredients and pour over the beetroot. Toss to ensure the beetroot are covered, then roast at 200C for approx 20-30 minutes. Delicious hot or cold.
