Root Vegetable Slaw

Ingredients

2 medium-large beetroots
2 large carrots
One quarter of a red cabbage
1-2 apples
0.25 C jalapenos (more or less to taste)
0.25 C sunflower seeds (more or less to taste)
1-2 t fennel seeds (more or less to taste)
1-2 T sesame seeds (more or less to taste)
Approximately 0.25 C apple cider vinegar
Salt and pepper to taste

Directions

Grate the beetroot and carrot. Slice the red cabbage finely, and dice the apples.

Mix all the ingredients in a bowl. Adjust the amounts of each ingredient to suit your tastes.

The vegetables are so fresh and keep so much longer than those bought at the supermarket. It's all delicious but some of our favourites are the lettuce mix, spinach and the peppers and courgettes. As for the tomatoes they are so sweet.
